Prep Work

We braised a whole boneless Boston butt in a mixture of onions, garlic, ancho & pasilla chiles, oranges, Coke, and beef stock. The result was meltingly tender and had a nice bitter-sweet flavor.

A pound of beautiful shrimp which we lightly poached for an appetizer.

Stove burners can roast corn pretty well, albeit a little messily.
Batter for our tres leches cake, which was prepped the day before so it could soak overnight.

The main dish was a DIY event, though we encouraged my folks to make at least one Taco "al Pastor," which is one of my favorites.

One of my all-time favorite desserts - relatively simple to make and always a hit with guests.
